Gluten free Thanksgiving

You're looking for a absolutely delicious and healthy Gluten free Thanksgiving recipe? I absolutely love this recipe for a Gluten free Thanksgiving. The sweet potato adds a warmth that is perfect for the holiday season!  Plus, like all my recipes on The Well , its easy peasy, just 5 ingredients or less (with the exception of salt/pepper..).

Sweet Potato Lasagna


4 lasagna sheets (I used Tolerant Green Pea Lasagna featured in the FALL TWN Collection)
1 can sweet potato puree
1 tablespoon coconut oil
1/4 cup almond mozzarella cheese (substitute with any nondairy cheese or regular cheese)
1 teaspoon cinnamon
1 tsp salt

Step by step:

1. Cook Pasta until al dente.
2. In a bowl, combine sweet potato with cheese, coconut oil, cinnamon and salt.
3.  In a dish pan, layer lasagna sheet, puree mixture, lasagna sheet, puree mixture, lasagna sheet, puree mixture, and a final lasagna sheet. Option to end with puree on top.
4. Cook at 350 for 15 minutes.
Broil for 1- 2 minutes to make it crisp.
